Coast to Coast Kitchen, the seafood brand founded by third-generation food entrepreneur and Selling Sunset reality television series cast member Emma Hernan, has debuted her signature empanadas at Target stores. The launch includes two seafood flavors developed exclusively for the retailer – Lobster Empanadas and Sweet Chili Shrimp Empanada – along with a new Crab Rangoon.

The products are available across the USA, including Alaska and Hawaii, and expand the brand’s seafood appetizer line launched at Target in February of this year. Other offerings range from New England Crab Cakes and Bacon Scallops to Shrimp Spring Rolls and Crab Minis.

Since its initial rollout at Target, Coast to Coast Kitchen has generated millions of dollars in sales and brought nearly 100,000 new customers into the seafood category. Millennial consumers accounted for 80% of those customers, while 40% of new-to-category transactions included three or more units.

The Lobster Empanada nods to Hernan’s Portuguese family roots and upbringing in Massachusetts, while Sweet Chili Shrimp reflects her years in California. Crab Rangoon was inspired by the founder’s grandfather, a chef who prepared crab and lobster spreads for family occasions.

“These flavors bring together my love for both coasts and make my products truly coast to coast,” said Hernan. “Food, for me, has always been about sharing a great bite with the people you love.”

Coast to Coast Kitchen products are made at the company’s two manufacturing facilities outside of Boston, which employ more than 100 people, the majority of whom are women.
