Frozens Figure Deliciously in US Foods Fall Scoop Lineup

US Foods, the Rosemont, Illinois-headquartered foodservice products distribution company, has unveiled its Fall Scoop lineup featuring 25 items intended to inspire chefs to re-imagine classics and create new dishes this season. From all-natural items and grass-fed beef to decadent desserts, the “Steak Your Claim” Scoop is promoted as “having something for every restaurant.”

The 25 items in the Fall Scoop lineup run the gamut from creative entrée options and accompaniments to simple sides and seasonal desserts.

Center of Plate Perfection

US Foods canoe cut beef marrow bonesAmong consumers partial to beef and pork, a recent survey suggests that 91 percent eat beef at least once a week. To satisfy this craving, US Foods is introducing three new items under the exclusive Stock Yards brand. Its All Natural Canoe Cut Beef Marrow Bones offering, which may be shared as an appetizer over garlic crostini, is pre-brined and pre-cut to save chefs time and cut operator food costs. Shipped frozen, the minimally processed bones arrive ready to thaw, season, roast and serve.

Marrow was especially popular in the 17th through the 19th centuries in Europe. At the time, a number of utensils were invented to eat it efficiently. In Victorian Edinburgh, Scotland, lovers of bone marrow met at the Marrow Bone Club. Each member had a heavy silver scoop ornamented with marrow bones.

Also new under the Stock Yards brand are All Natural Grass Fed Ribeye Steak and All Natural Grass Fed Sliders. The grass-fed movement in the United States started as a reaction to cattle being sent to feedlots in the 1950s. Cows were fattened up by eating corn and grains, instead of roaming free and grazing on grasslands, as had been the norm for centuries. US Foods’ Grass Fed Ribeye is 100% grass-fed and grass-finished.

US Foods Seared Yellowfin TunaSeafood lovers can choose the Chef’s Line Seared Yellowfin Tuna Slices, which are rubbed with pepper and garlic and ready-to-eat, as well as two shellfish varieties from Harbor Banks – Breaded Stuffed Shrimp and Grits, and Breaded Stuffed Shrimp Southwest Style.

Versatile Seared Yellowfin Tuna Slices save chefs time and greatly reduce food waste. The sashimi grade product, which is frozen to -35°C immediately after processing and therefore safe to eat raw, is preserved with Clearsmoke®, a filtered wood smoking treatment registered by Anova Foods that retains tuna’s natural color and taste.

US Foods stuffed shrimp and gritsHarbor Banks’ deep-fried shrimp and grits prove that comfort food and trendy don’t have to be mutually exclusive. Grits and smoked cheese impart a savory taste, yet a light, panko-style breading offers a satisfying crunchiness. The product pairs well with chorizo aioli for a quick appetizer.

For a bit more spice, there’s tail-on butterfly shrimp stuffed with Monterey Jack and cheddar cheeses, corn, black beans, Southwestern seasonings and green chilies with a pop of lime. They’re coated with a blend of tortilla chips and seasoned breadcrumbs, which results is a tasty blend of flavors that can be adapted to a variety of menus.

Show Stopping Sides

The Chef’s Line Parmesan Peppercorn Compound Butter can be used at any stage of cooking to elevate side dishes as well as entrees. Furthermore, Rykoff Sexton Fire Grilled Artichokes and Caramelized Sliced Onions are versatile, as are Chef’s Line Natural Chip and Natural Fry offerings. They are made without artificial ingredients, flavors or colors and are ready to be customized.

Sweet Finishes

No fall menu would be complete without the seasonal flavors of pumpkin and sweet potato. US Foods’ Chef’s Line Rustic Pumpkin Sweet Potato Tart is filled with candied orange zest, warm spices and topped with praline-pecan streusel. Glazed and topped with coarse sugar, “it all but shimmers on the plate,” says the US Foods public relations department.
