Marshfield Farm Ice Cream has launched Acres, a new ice cream range created specifically for chefs and developed for performance in professional kitchens. Flavors include Chocolate Sea Salt, Caramel Sea Salt, Madagascan Vanilla, and Strawberry – each supplied in 4.5 liter tubs priced at £24.38.
Produced at a 1,200-acre family dairy farm in Wiltshire, England, the ice cream has been created to meet the practical demands of busy kitchens, combining quality ingredients with stability and consistency. The line reflects a new stage of innovation for the business, pioneered by the next generation of the Marshfield family, and backed by more than three decades of ice cream-making expertise.
While many ice creams used in the hospitality sector are produced primarily to stand alone as a dessert, Acres has been formulated for presentation as an ingredient on the plate, complementing other elements of a dessert rather than overpowering them. Low overrun reduces air within the product to create a denser texture and richer mouthfeel, while cream levels have been carefully calibrated to ensure the sweet treat remains indulgent yet balanced when paired with plated desserts. The range also avoids inclusions, giving chefs greater flexibility and control when incorporating the ice cream into their dishes.

As a producer that controls its supply chain from field to freezer, every batch of Acres begins with fresh milk from the farm’s own herd of 250 cows, with around 95% of the livestock’s feed grown on the farm itself. This level of control over production allows the business to maintain tight consistency in milk quality and flavor, while supporting its wider regenerative farming approach.
Flavors have been developed using carefully selected ingredients including Madagascan vanilla, 52% cocoa mass dark chocolate, hand-harvested Cornish sea salt, and fresh strawberries.
“Working with restaurant groups and chefs in my previous roles, I saw first-hand how important consistency and performance are in a professional kitchen. Ice cream often ends up being the one element that doesn’t quite behave the way chefs need it to. Acres has been launched to fix that problem – combining provenance with performance to create a product that can withstand the pressure of professional kitchens and deliver consistently on flavor and texture,” said Joe Baldwin, national foodservice accounts manager.
The latest product rollout follows a £5 million investment in Marshfield Farm’s dairy and production facilities, enabling the business to scale up production while maintaining high quality standards. The development also includes a new kitchen and dedicated space where chefs, buyers and customers will be able to visit the farm for demonstrations, tastings and tours.
