British frozen food distributor Central Foods has launched a vegetarian and gluten-free Ruby Chocolate and Raspberry Cheesecake for the foodservice sector. The Menuserve offering features a dark cocoa biscuit base, topped with a light and creamy, fruity ruby chocolate and raspberry cheesecake, finished with a layer of dark chocolate ganache swirled with ruby chocolate.

Part of the growing free-from range offered by the Collingtree, England-based company, the dessert is positioned appeal to all diners – not just those looking for a gluten-free or vegetarian option.

“The fruity flavors from the raspberry and the ruby chocolate combine with the dark cocoa biscuit base to create a match made in heaven,” said Gordon Lauder, managing director of Central Foods. “We have been committed to extending our free-from range for the foodservice sector by continually adding new gluten-free options. This product is very creamy, but not too sweet, and showcases one of the most stylish ingredients for 2019 – ruby chocolate.”

Dubbed “the fourth type of chocolate,” ruby chocolate is ballyhooed as the on-trend dessert ingredient for 2019.  Made from unfermented cocoa beans, with their natural red-pink color, ruby chocolate has a creamy, light, fruity/berry flavor that works nicely with cheesecake. Its unusual pink hue imparts instant visual appeal. Raspberry is the right partner for this popular ingredient.

Pre-portioned into 14 slices and already meeting Public Health England’s 2020 Sugar Guidelines, the new cheesecake is ideal for hotels, cafés, garden centers, business and industry caterers, care homes, universities and other foodservice outlets.

“Frozen desserts play a key role in the vast majority of kitchens now, helping to reduce waste and save money,” said Lauder. “The Menuserve vegetarian and gluten-free Ruby Chocolate and Raspberry Cheesecake would be perfect in any catering outlet.”
