Nopal Products, Quesadillas, Salsa, Guacamole and More from Mex-Al

Aachen, Germany-based MEX-AL El Sombrero will hold forth at Anuga in Foodservice Hall 7, Stand F029. Two years ago at the Cologne fair, the company launched Vegetarian Nopalburgers, which have since been selling very well.

The whole range of nopal products will again be presented as part of the MEX-AL products range. Two new frozen nopal convenience snacks will be added to the nopal range, plus a new snack product  with potatoes, cream cheese and onions.

Penquitas de Nopal are small cactus leaves from Mexico (Penquita is the Spanish diminutive of penca = leaf). Marinated and covered with a tasty batter and breading, they weigh about 10 to 12 grams each and are packed for foodandservice in cases of 3 kg. The product is IQF deep frozen and by frying, it is ready to be served in less than two minutes.Penquitas de Nopal can be served as a convenience snack with salsas and dips, as a starter, or combined with full menus.

Nopal & Cream Cheese Bites are shaped like small cactus leaves and consist of a core filling of cream cheese, diced nopales (diced cactus paddles), diced red bell pepper, onions, cilantro and spices. The core is covered by wet batter and breading. The frozen bites weigh 30 grams each and are packed for foodservice in 3 kilogram cases. The product is ready to serve after three minutes of frying. The bites can be served as convenience snacks or can be combined with that small meal in between or integrated in existing menus.

Cream & Onion Potato Bites have a slightly spicy core filling consisting of cream cheese, onions and small bits of jalapeno chilis. The outer layer is a soft potato dough which in turn is covered by a thin layer of dry breading, thus yielding a crunchy taste after frying.
The frozen potato bites weigh 28 to 30 grams each and are packed for foodservice in 3 kilogram cases. Using a fryer, the frozen product will be ready to serve in about three minutes. The bites make a great convenience snack or can be combined with that small meal in between or integrated in existing menus.

Quesadillas and their varieties are the MEX-AL theme topic for Anuga 2013.
MEX-AL has been producing small Quesadilla quadrants for years. They are made with wheat flour tortillas, filled with cheddar-mozzarella cheese and small chile jalapeno bits. Using  pan or fryer, they are ready to serve in a few minutes.

MEX-AL will be introducing three more quesadillas at the show in Cologne, as follows:

Quesadilla de Verdura, half moon shaped, consisting of a dough mix of corn masa and wheat flour, filled with a cheese mix, bell pepper bits, grated carrots, onions and finely chopped cilantro. Each piece weighs 40 grams.

Quesadilla de Maiz con Frijol (corn tortilla with chipotle-retried beans), a 15 cm corn tortilla with a layer of chipotle-refried beans and grated cheese, folded down to a quarter, about 35 grams per piece.

Quesadilla de Trigo con Frijol (wheat flour tortilla with chipotle-retried beans, a 16 cm wheat flour tortilla with a layer of chipotle-refried beans and grated cheese, folded down to a quarter, about 65 grams per piece.
 
Samples of  bigger quesadillas with different filling variations like meat, cheese and vegetable preparations will also be demonstrated  at the Anuga fair. Other varieties include Quesadillas  with Corn and Wheat Flour Tortillas and Quesadillas de Verdura. Restaurant operators may decide which quesadilla concept best suits their menu: They may develop their own recipe and fill special quesadillas on site,or they can include quesadillas as convenience snacks.
